Seven Minute Frosting
2 large egg whites, unbeaten
1 1/2 cups granulated sugar
2 teaspoons light corn syrup
1/3 cup cold water
dash salt
1 teaspoon vanilla
Procedure:
Place egg whites, sugar, corn syrup, water, and salt in top of double boiler (not over heat yet) - beat 1 minute with an electric hand-held mixer to blend. Place over boiling water and cook, beating constantly, until frosting forms stiff peaks, about 7 minutes. Do not over cook.
Remove from boiling water. Pour frosting into a mixing bowl. Add vanilla and beat until spreading consistency is reached, about 2 minutes.
Seven Minute Frosting for Lemon Cake:
Add 1/8 teaspoon of lemon extract along with vanilla and tint with a few drops of yellow food coloring. Top with tinted coconut, if desired.
To tint coconut, shake 1 1/3 cups flaked coconut in a jar with a few drops of yellow food coloring until uniformly tinted.
