How to Make a Rose Petal Wedding Cake

Material Required:

Your choice of cakes (2-tier shown) covered with marzipan or rolled fondant placed on cake boards and stacked using a

  • cake stand for additional support. Placed onto a larger than normal cake board.
  • Number 1 and 2 icing tubes (pastry tips)
  • Grease-proof paper icing bags
  • Ivory colored Royal icing
  • At least three different sizes of petal cutters
  • Ivory colored gum paste or
  • sugar paste with added gum tragacanth
  • Burgundy colored gum paste or
  • sugar paste with added gum tragacanth
  • A bone or ball modeling tool
  • Rolling pin

 

  • Step-1:Pipe embroidery type patterns



     

    1. Using the number 1 icing tube, in an icing bag filled with ivory royal icing, pipe embroidery type patterns around the sides of the cakes.
    2. The piping around the base of the cakes (bulbs or shells) is piped using the number 2 icing tube using the same frosting.
    3. The cakes should look like this so far.
  • Step-2:Make Rose Petals


     

    1. Start with a small ball of gum paste or sugar paste with added gum tragacanth. Knead into a smooth shape.
    2. Using the small paint brush dampen the middle of one daisy shape and. Dust your work area with a bit of powder or icing sugar. Roll out the colored paste very thinly.
    3. Gently peel away from the rolling pin if the paste wraps itself around the pin. This often happens when rolling out paste this thinly.
    4. To make the petals, cut one at a time using a petal cutter.
    5. Place the cut-out petal onto the palm of your hand or onto a clean piece of sponge. Ball the edge using the bone or ball modeling tool.
  • Step-3:Shaping the rose petals



     

    1. Ball the edge using the bone or ball modeling tool. Continue all the way round the petal and then the middle.
    2. Turn the petal over and give a final rub in the middle and then put to one side to dry.
    3. Now repeat using various sizes of cutter until you have a good supply of petals on hand.
    4. Leave to dry in a dry warm room until hard enough to pick up without bending.
    5. Note: if you leave them near a window they may not dry properly and could droop due to moist air.

     

  • Step-4:Decorate the cake with Rose Petals


     

    1. When the petals are hard enough you can start to place them onto the base board and around the cakes. Attach them as you go with a little blob of icing.
    2. Finish the cake by topping the top tier with as many petals as you feel you need.
    3. If you like you could pipe a dome of icing into the middle of the top tier to give it additional height and than cover it with petals.
    4. Alternately you could place a wedding cake ornament on top and arrange the petals around it or place a floral ornament on top.
