Mexican Wedding Cake
2 eggs 2 c. flour 1 tsp. baking soda 2 c. sugar 1 tsp. vanilla 1 c. chopped nuts 1 (#2) can crushed pineapple (do not drain) Procedure: Hand mix all above. Pour in greased and floured 9 x 11 inch pan. Bake at 350 degrees for 40-45 minutes. Frost immediately after taking from oven. Frosting: Procedure:
(Can use mixer). 8 oz. cream cheese, softened 1/2 c. butter Add: 1 1/3 c. powdered sugar 1 tsp. vanilla. Spread over cake and sprinkle with 1 cup chopped nuts.
