Mexican Wedding Cake Recipes


Sybils Mexican Wedding Cake

2 c. flour
2 c. sugar
1 tsp. soda
1 tsp. vanilla
1 (20 oz.) can crushed pineapple
1 c. pecans, chopped

Procedure:

Preheat oven to 350 degrees. Grease and flour a 9x13-inch pan. Mix first 3 ingredients; add next 3. Pour into prepared pan and bake about 25 minutes.

Top with the following while warm, not hot:

1 stick butter, softened
8 oz. cream cheese, softened
3/4 c. granulated sugar
1 tsp. vanilla
1/2 c. pecans

Procedure:

Whip first 4 ingredients until fluffy; add pecans. (If there is any left over, refrigerate.)
