Mexican Wedding Cake
6 tbsp. confectioners sugar 2 c. cake flour 1 c. butter or 1/2 cup butter and 1/2 cup butter 1 c. pecans, chopped 1 tsp. vanilla Procedure: Cream butter and vanilla; sift flour and sugar together then add butter. Add chopped nuts; mixture will be dry.
Form into balls, size of walnuts. Place in ungreased cookie sheet. Bake at 350 degrees for 12-15 minutes. The cookies will be only slightly brown. Roll in confectioners sugar while still warm. Makes 3 dozen. Keep in covered container.
