Hawaiian Wedding Cake
2 eggs, slightly beaten 2 c. sugar 1 (20 oz.) can crushed pineapple 2 c. flour 2 tsp. baking soda 1/2 tsp. salt 1 tsp. vanilla 1/2 c. chopped pecans 1 stick butter 1 pkg. of 8 oz. cream cheese 2 1/2 c. confectioner's sugar 1 tsp. vanilla 1/2 c. chopped pecans Procedure: Cream sugar and eggs; add pineapple (juice and all). Add flour, soda, salt, vanilla and chopped pecans. Bake at 350 degrees in an ungreased 13 x 9 inch pan for 30 to 40 minutes. Cream butter and cream cheese, add confectioners; sugar and vanilla; stir in pecans. When cooled, frost cake. Keep cake in refrigerator.
