How to Make a Daisy Wedding Cake

Material Required:

Your choice of cakes covered with chocolate or chocolate colored sugar paste on thin boards suitably doweled and stacked.

  • White sugar paste with added gum tragacanth
  • Green sugar paste with added gum tragacanth
  • Daisy cutter medium or large
  • Medium ivy leaf cutter
  • Rolling pin
  • Cornstarch for dusting the work surface
  • Bone modeling tool
  • Small paint brush
  • A small container of water
  • Dimpled sponge or something else suitably cupped for drying the flowers in
  • A sieve or similar for marking the center of the flowers
  • A small amount of royal icing
  • A small icing bag
  • A number 1 or 2 icing tube

How to Make Daisies:

  • Step-1:Daisies


     

    1. Roll out the white sugarpaste with added gum tragacanth very thinly on a lightly cornstarch dusted work surface.
    2. Cut out a daisy flower shape using the daisy cutter and place onto the palm of your hand.
    3. Using the bone tool gently ball each individual petal of the daisy.
  • Step-2:Make a Set of Daisies



     

    1. Cut out another daisy flower shape and repeat.
    2. Using the small paint brush dampen the middle of one daisy shape and..
    3. place it on top of the other.
    4. Place the two into a cupped former such as a foam fruit divider and leave to dry.
  • Step-3:Daisies yellow disk


     

    1. When dry they should hold their shape looking like this....
    2. Roll a small ball of yellow paste and press it gently onto a sieve or something that gives a similar pattern
    3. You should create a patterned disc like this.
    4. Dampen the center of the flower with a little water and place the yellow paste into the middle.
    5. Now you have created your first daisy. Make several more and then leave them to dry.
  • Step-4:Making ivy leaves


     

    1. Let's add a touch of greenery by making some ivy leaves using green sugarpaste with added gum tragacanth.
    2. Roll out the paste thinly on a lightly dusted work surface and cut out a leaf using a medium ivy leaf cutter.
    3. The one I have used veins the leaf at the same time as it cuts. Alternately, you could use a special veining mat or a clean real leaf.
    4. Using the bone tool, ball the edges gently all the way round. Leave to dry or until stiff enough to hold their shape.
  • Step-5:Assemble the daisy decoration


     

    1. Now with the hard work done the rest is fairly simple.
    2. Using an icing bag, with a number 1 or 2 icing tube inside, pipe a small blob of royal icing and attach the daisies and the leaves around the bottom of each cake.
    3. You don't need to add a leaf to each daisy just every other will be plenty.
    4. For the top make a domed piece of paste and decorate with daisies and leaves.
    5. Alternately you could also decorate it with a cake top.
